If you’re enjoying tea in early autumn, we recommend pairing it with Kyoho grapes, which are juicy, very sweet, and just a touch astringent. By brewing the tea to suppress bitterness and astringency, you can highlight the sweetness of the grapes while keeping your palate refreshed.

What You’ll Need

Tea leaves: 017 Fujieda Kaori … 4g
Hot water (first infusion): 80°C, 90ml
Hot water (second infusion): 80°C, 100ml

How to Brew

1. Brew the First Infusion

Add 90ml of 80°C hot water to the teapot with tea leaves, let it steep for 50 seconds, then pour into a cup. Enjoy the first infusion on its own.

2. Brew the Second Infusion

Add 100ml of 80°C hot water to the teapot, steep for 10 seconds, then pour into the same cup after finishing the first infusion. Done!

This recipe is designed to bring out both sweetness and astringency.
