Recipe for savoring the umami of simmered daikon radish with "061 Tenmyo"

"061 Tenmyo" is a gyokuro tea with a refreshing, easy-to-drink, and elegant taste. To enjoy its delicate umami and aroma, it's recommended to pair it with foods that have a gentle flavor, like daikon radish simmered only in dashi broth.

The first and second infusions, which slowly extract the umami at low temperatures, are perfect for drinking during meals. The third infusion, brewed at a higher temperature to enhance the aroma, is ideal for after-meal enjoyment.
