In this season when the air is dry and it's easy to catch a cold, kumquats, which are in season during Daikan (the coldest time of the year), are something you'll want to keep on hand as a tea accompaniment. When candied with honey, they become a powerful winter ally that's gentle on the throat and skin.
To complement the bittersweet fruit and citrus aroma, the fresh and refreshing "027 CA278" pairs well. This tea has a faint sweet aroma reminiscent of grains, a mellow richness, and a pleasant astringency.
It refreshingly cleanses and crisply tightens the rich sweetness of the candied kumquats simmered in honey and water.
