What You'll Need

Tea leaves 'Sayama Kaori'… 3g
Hot water (first infusion)… 100°C 90ml
Hot water (second infusion)… 100°C 50ml
Hot water (third infusion)… 100°C 70ml

How to Brew

1 / Brew the First Infusion

Pre-warm your cup with hot water (not included in the measurements). Add the tea leaves to a teapot, pour in 90ml of 100°C hot water, steep for 2 minutes, then pour into your cup.

2 / Brew the Second Infusion

Add 50ml of 100°C hot water to the teapot, steep for 2 minutes, then add to the same cup as before.

3 / Brew the Third Infusion

Add 70ml of 100°C hot water to the teapot, steep for 3 minutes, then add to the same cup to finish!

With its strong astringency and robust flavor, this tea stands up to the rich sweetness of red bean paste and black sugar syrup.
