What You'll Need

Tea leaves: 035 Sakimidori Sonogi ... 4g
Hot water (first infusion): 75°C, 120ml
Hot water (second infusion): 85°C, 100ml

How to Brew

1 / Brew the First Infusion

Pre-warm your teacup with hot water (not included in the measurements). Add the tea leaves to the teapot, pour in 120ml of water at 75°C, let it steep for 1 minute, then pour into the cup.

2 / Brew the Second Infusion

Pour 100ml of water at 85°C into the teapot, let it steep for 10 seconds, then pour into the cup to finish!
