Recipe to Enjoy "005 Okumidori" with Kinpira-Style Bamboo Shoots

What You'll Need

Tea leaves: 005 Okumidori… 4g
Hot water (first infusion)… 65°C, 100ml
Hot water (second infusion)… 75°C, 100ml

How to Brew

1. Brew the First Infusion

Pre-warm your teacup with hot water (not included in the measured amount). Add the tea leaves to your teapot, pour in 100ml of water at 65°C, and steep for 1 minute and 45 seconds. Then pour into the cup.

2. Brew the Second Infusion

Pour 100ml of water at 75°C into the teapot, steep for 30 seconds, then pour into the cup to finish!

Brewing the tea on the heavier side makes it a perfect match for pairing with bamboo shoots.
