Autumn Tea Time with Mont Blanc: A Recipe Using Rich "Sayama Kaori" Japanese Black Tea

What You'll Need

・ 4g of "Sayama Kaori" Japanese black tea leaves
・ Water for first infusion: 100ml at 100°C
・ Water for second infusion: 80ml at 100°C

Brewing Instructions

1 / First Infusion

Place the tea leaves in a teapot without a strainer. Pour in 100ml of water at 100°C and steep for 2 minutes. Then, place a strainer over an iced server and pour the tea.

2 / Second Infusion

Pour 80ml of water at 100°C over the tea leaves and steep for 2 minutes and 30 seconds, then add this to the server from the first infusion. Stir to cool, then pour into cups to serve!
