Refreshing "Shikisyun" Tea with Almond Tofu and Loquat Compote

The Taiwanese tea "Shikisyun" offers a bouquet-like fragrance and flavor. As you steep it multiple times, you can enjoy the changing taste from sweetness to a crisp flavor. For pairing with sweets, the second infusion is recommended.

"Shikisyun" with Almond Tofu
and Loquat Compote

Ingredients

・ Tea leaves: "Shikisyun" 4g
・ Water (1st infusion) 100°C 100ml
・ Water (2nd infusion) 100°C 100ml
・ Water (3rd infusion) 100°C 100ml
※ Pre-warm the cups and tea pitcher.

Brewing Method

1 / First Infusion

Place the tea leaves in the teapot without the strainer. Pour 100ml of 100°C water, steep for 2 minutes, then pour into the tea pitcher and distribute into cups.

2 / Second Infusion

For the second infusion, pour 100ml of 100°C water into the teapot, steep for 1 minute, then pour into the cups.

3 / Third Infusion

For the third infusion, pour 100ml of 100°C water into the teapot, steep for 1 minute and 10 seconds, then pour into the cups.

※ You can enjoy up to about five infusions if desired (increase steeping time by 10 seconds for each subsequent infusion).
