We'll introduce you to brewing methods that bring out the characteristics of the tea leaves, along with food pairings to enjoy. The steps are the same as the basic brewing method, but you can adjust the temperature and steeping time to your liking.
The Flavor of "005 Okumidori"
"005 Okumidori" is characterized by its deep, layered aroma. To fully experience the multiple layers of fresh and fragrant scents lingering in your mouth, 75°C is the ideal water temperature. It has a well-balanced taste without excessive astringency, followed by a roasted aroma reminiscent of kinako (roasted soybean flour), and then a refreshing flavor reminiscent of mugwort and muscat grapes.
"005 Okumidori" Pairing: "Japanese Chestnut Mont Blanc"
Another feature of "005 Okumidori" is that the roasting temperature is adjusted to remove any grassy notes while adding a toasty flavor, yet still preserving the rich aroma characteristic of the Okumidori cultivar. This flavor profile is perfect for pairing with a Mont Blanc dessert draped in rich chestnut cream. When you come across a Japanese chestnut Mont Blanc in early autumn, we highly recommend trying this pairing.
