Afternoon Tea Recipe Pairing "035 Sakimidori Sonogi" with Chèvre Cheese

With its sharp astringency, crisp aroma, and gentle mouthfeel, "035 Sakimidori Sonogi" boasts a moderate bitterness and dry flavor. An ideal pairing for this tea is chèvre cheese, made from goat's milk. To complement the cheese's distinctive aroma and mild yet rich taste, we recommend adding the smoothness of honey, the fresh green scent of dill, and the texture of walnuts. Please enjoy this surprising combination where saltiness, sweetness, milkiness, and astringency beautifully marry in both taste and aroma.

Afternoon Tea Recipe Pairing "035 Sakimidori Sonogi" with Chèvre Cheese

"035 Sakimidori Sonogi" is uniquely cultivated with a spectacular ocean view, rare in Japan. It's characterized by a well-balanced bitterness and astringency, resulting in a refreshing taste. Produced using the "deep steaming method" which thoroughly steams the tea leaves to their core, it has a remarkably mellow flavor. The tightly curled shape of the leaves gives it the alternate name "Guricha" (curled tea).

<Ingredients>

4g "035 Sakimidori Sonogi" tea leaves
90ml water
Ice cubes, as needed

<Preparation>

【1】Cold brew extraction

Place the tea leaves, 90ml of water, and 2-3 ice cubes in a teapot. Let it sit for 15-20 minutes.

【2】Pour into a glass

The mellow flavor unique to Guricha is further enhanced by cold brewing. The refreshing balance of bitterness and astringency pairs well with the rich cheese.
