What You'll Need

Tea leaves: 'Oolong Tea Benifuki' ... 3g
Hot water (First infusion): 90°C 80ml
Hot water (Second infusion): 100°C 100ml
Hot water (Third infusion): 100°C 80ml

How to Brew

1. Brew the First Infusion

Remove the tea strainer and set it in the cup. Pour 80ml of 90°C hot water into the teapot with the tea leaves, let it steep for 2 minutes, then pour into the cup.

2. Brew the Second Infusion

Pour 100ml of 100°C hot water into the teapot, let it steep for 45 seconds, then add to the cup.

3. Brew the Third Infusion

Pour 80ml of 100°C hot water into the teapot, let it steep for 30 seconds, then add to the cup. Done!

You might expect the astringency to be overpowering, but this pairing remains endlessly enjoyable.
