Enjoy winter tea time with homemade rice crackers from leftover mochi and the refreshing "058 Harumidori"

Turn leftover New Year's mochi into a light snack by lightly frying and sprinkling with salt. For such a treat, we recommend "058 Harumidori", a tea with umami and sweetness that pairs well with rice.

This gentle and refined tea has a beautiful light green color characteristic of lightly steamed sencha. For the first infusion, use less water for a stronger extraction, and for the second, use more water for a refreshing taste.

Winter Tea Time with the Refreshing "058 Harumidori"

Ingredients

・"058 Harumidori" tea leaves: 4g
・For the first infusion: 60ml of water at 60°C
・For the second infusion: 120ml of water at 75°C

Brewing Instructions

1. First Infusion

Warm the cup with hot water (not included in the measurements). Add the tea leaves to the teapot, pour in 60ml of 60°C water, and let it steep for 2 minutes. Pour every last drop into the cup and enjoy.

2. Second Infusion

Pour 120ml of 75°C water into the teapot, let it steep for 25 seconds, then pour into a larger cup than the first infusion. Your tea is now ready.
