When it comes to mochi snacks, anko mochi is the classic choice. The combination of lightly grilled mochi and moderately sweet anko (red bean paste) offers a comforting taste any time you eat it.
Pairing it with "001 Haru Moegi," which has a mellow aroma reminiscent of Japanese chestnuts, creates a harmonious blend of sweet fragrances. A notable characteristic is that brewing at a lower temperature enhances the aroma.
The recipe introduces a method of brewing at 70°C, but steeping in room temperature water is also recommended. Start by enjoying the rising grain aroma before taking a sip.
