We'll introduce a brewing method that brings out the tea's characteristics and a pairing suggestion. The steps are the same as the basic brewing method, but you can enjoy it by adjusting the temperature and steeping time.
The Flavor of "049 Asahi"
To fully appreciate the gyokuro "049 Asahi", we've prepared a recipe where you can eat the tea leaves as ohitashi (boiled and seasoned). The first infusion is a cup of concentrated umami. It has a delicious taste reminiscent of grains and edamame. The second infusion still has strong umami and a beautiful gyokuro color. For the third infusion, using boiling water extracts all remaining components, making the tea leaves light and easy to eat. We've also introduced the detailed procedure in this article.
"049 Asahi" Pairing: Cod Yudofu (Hot Tofu)
As producer Mr. Hata says, Asahi has a refreshing, feminine aroma. Its refined umami has no sharp edges, making it suitable to pair with dishes of subtle flavors. Make yudofu with cod, which is in season from January to February, and season it with dashi and soy sauce. Dip it in ponzu sauce for a light taste, and you'll appreciate being Japanese! It's a perfect pairing.
