The Flavor of "004 Yabukita Yame"
Among the teas from the Yame region, you can occasionally find ones with a gentle aroma reminiscent of matcha. This "004 Yabukita Yame" from Mr. Ejima is one such tea. We found that the optimal temperature to bring out this aroma is 70°C. Coincidentally, this recipe is our recommended basic recipe, reaffirming its status as the standard approach. For the second infusion, be sure to observe the blue tint of the tea color.
"004 Yabukita Yame" Pairing: "Simmered Sweet Shrimp and Winter Melon"
To complement the classic Yabukita flavor, a soy sauce-based broth makes for an excellent pairing. To fully appreciate the umami and unique aroma of Yame's shaded tea, we recommend enjoying it with a light, subtly flavored simmered dish. Try to experience how the natural sweetness of sweet shrimp (in season from September to February) and winter melon (in season from July to September) harmonizes with the tea.
