"046 Okuyutaka Kirishima" Recipe for White Wine Glass
The potential aroma of Okuyutaka Kirishima is brought out by using a white wine glass with a narrow rim and full body, highlighting the rich aroma inherent to this variety. Also, different parts of the tongue perceive different tastes, with the first taste being the strongest. The change in flavor due to the glass shape is because of how the liquid enters the mouth. The classic white wine glass shape doesn't overemphasize sweetness and hits the central part of the tongue that perceives acidity, allowing for a refreshing enjoyment of the drink.
Ingredients
Tea leaves: "046 Okuyutaka Kirishima" 4g Hot water: 90ml (70°C) White wine glass Crushed ice: 2 pieces Teapot Beaker (or glass)
Brewing Method
[1] Extract the sencha and rapidly cool with ice
First, put 1-2 ice cubes in the beaker. Put the tea leaves in the teapot, pour 90ml of 70°C water, and wait for 70 seconds. Close the teapot lid and transfer the tea to the beaker.
[2] Pour into the white wine glass
Hold the beaker containing the tea in one hand and swirl it horizontally in a circular motion to cool the tea. Once it's cold, remove the ice and pour the tea into the white wine glass.
[3] Swirl the glass
Hold the stem of the wine glass and gently swirl it to volatilize the tea's aromatic components. The key is to swirl so that the tea touches the glass walls.
