Herb + Sencha Recipe: Add Chamomile to "037 Tsuyuhikari Oyama"

The refreshing season with a gentle breeze is just around the corner. As plants begin to bud, why not change things up a bit and add some herbs to your sencha?

If you add dried chamomile to "037 Tsuyuhikari Oyama," you’ll enjoy a luxurious cup with a fresh, green aroma, subtle sweetness, and a gentle umami flavor layered together.

What You'll Need

Tea leaves "037 Tsuyuhikari Oyama"… 4g
Dried chamomile… 1g
Hot water (first infusion)… 75°C 120ml
Hot water (second infusion)… 80°C 100ml

How to Brew

1/Brew the First Infusion

Warm your cup with some hot water beforehand (not included in the measurements). Place the tea leaves in the teapot, add the chamomile on top, pour in 120ml of 75°C hot water, let it steep for 1 minute, then pour into your cup.

2/Brew the Second Infusion

Pour 100ml of 80°C hot water into the teapot, let it steep for 20 seconds, then pour into your cup. Enjoy!
