"055 Tsuyuhikari Takeo" is a tea known for its elegant aroma and savory umami reminiscent of nori seaweed. It pairs especially well with sweet and tart fruits, so this time we enjoyed it with a strawberry tart loaded with fresh strawberries.

What You’ll Need

Tea leaves: "055 Tsuyuhikari Takeo" … 4g
Hot water (1st infusion): 70°C, 100ml
Hot water (2nd infusion): 80°C, 90ml
Hot water (3rd infusion): 85°C, 90ml

How to Brew

1 / Brew the First Infusion

Pre-warm your teacup with hot water (not included in the measured amount). Add the tea leaves to the teapot, pour in 100ml of water at 70°C, steep for 1 minute, then pour into the cup and enjoy.

2 / Brew the Second Infusion

Pour 90ml of water at 80°C into the teapot, steep for 10 seconds, then pour into the cup used for the first infusion.

3 / Brew the Third Infusion

Pour 90ml of water at 85°C into the teapot, steep for 15 seconds, then add to the cup, and it’s ready to enjoy!

Enjoy the vivid color of the tea with your eyes as well. The first infusion is a pale yellow-green, while the second and third infusions become a deeper green.
