Wakocha Benihikari Recipe Paired with Nozawana Pickles

“Wakoucha Benihikari” is a Japanese black tea with a refreshing aroma, subtle sweetness, and very little bitterness.

Its clean aftertaste makes it a perfect match not only for sweets but also for meals. Surprisingly, it pairs well with pickled vegetables that have a lactic acid tang, such as Nozawana pickles. The tea softens the saltiness of the pickles and leaves your mouth feeling refreshed.

Hot water (first infusion): 100°C, 120ml

How to Brew

1. Brew the First Infusion

Pre-warm your teaware with hot water (not included in the measured amount). Place the tea leaves in the teapot, pour 120ml of water at 100°C, and steep for 2 minutes and 30 seconds. Pour into your cup and enjoy!
