Savoring "020 Saemidori" Paired with Kashiwa Mochi

"020 Saemidori," with its rich umami reminiscent of nori seaweed and its blue aroma, pairs perfectly with Japanese sweets. The refreshing scent of kashiwa mochi and the sweetness of anko create an especially well-balanced combination.

For the first infusion, we extract at a low temperature to achieve a soft flavor and mouthfeel. For the second and third infusions, we slightly raise the temperature to enhance the aroma while maintaining a crisp taste, then blend them together.

Ingredients

・ Tea leaves: "020 Saemidori" 4g
・ Water (1st infusion) 60°C 120ml
・ Water (2nd infusion) 70°C 90ml
・ Water (3rd infusion) 80°C 90ml

Brewing Method

1 / First Infusion

Warm the teacup with hot water. Add the tea leaves to the teapot, pour in 120ml of 60°C water, and steep for 1 minute and 40 seconds before pouring into the cup.

2 / Second Infusion

Pour 90ml of 70°C water into the teapot, steep for 20 seconds, then add to the first infusion.

3 / Third Infusion

Pour 90ml of 80°C water into the teapot, steep for 20 seconds, then add to the mixture of the first and second infusions to complete the brew.
