Mocktail-Style "Juniper Berry Tea" Recipe Made with Carbonated Water

A unique flavor tea blending juniper berries, used for gin's aroma, with "Okumidori" green tea known for its soft fragrance and sweetness. This is an original creation by Senchado Tokyo.

The combination of juniper berries, which have a woody, spicy, and sweet profile, with sencha is delicious on its own. However, adding carbonation to create a mocktail-style drink truly enhances its character.

Mocktail-Style "Juniper Berry Tea" Made with Carbonated Water

The aroma of juniper berries adds complexity to the tea's flavor, making each sip a delightful discovery in this refreshing tea.

What You'll Need

・4g of "Juniper Berry Tea" leaves
・40ml room temperature water
・120ml carbonated water
・Ice cubes, as needed
・Simple syrup, to taste

Brewing Method

1. Open up the tea leaves

Place the tea leaves in a teapot, add 40ml of room temperature water, and wait for 20 minutes.

2. Extract

Pour the mixture from step 1 into a glass filled with ice cubes.

3. Extract with carbonation

Slowly pour 120ml of chilled carbonated water into the teapot in several portions. Wait for 1 minute and 20 seconds, then pour it into the glass. Add simple syrup to taste if desired.

TEA TALK

The gentle "Okumidori" has a slight astringency within its sweetness, providing a refreshing aftertaste. It's a sencha variety that's easy to drink even in summer due to its crisp taste. True to its quality, it beautifully balances the unique flavor of juniper berries while maintaining the delicious taste of the tea.
