There are days in summer when you don't want to boil water... For this recipe, we don't boil water for the first infusion. Place a single ice cube on top of the tea leaves in the teapot, then add room temperature water. After 6 minutes, pour it into a rock glass filled with ice. Once you've cooled down with the first infusion of cold tea, prepare hot water for the second infusion and pour it directly into the teapot. Don't worry if there's still ice left. The lower temperature brings out the sweetness of Harumoegi.
