Recipe: Fragrant "017 Fujieda Kaori" with Deep-Fried Eggplant in Dashi

"017 Fujieda Kaori" is characterized by its jasmine-like aroma. With just one sip, a refreshing taste and floral fragrance spread throughout your mouth. When pairing it with dishes that have strong flavors, such as deep-fried eggplant in dashi, it's recommended to brew it slightly stronger to match the intensity. This brings out a pleasant bitterness along with the satisfying astringency typical of sencha.

What You'll Need

・Tea leaves "017 Fujieda Kaori" 4g
・Water (1st infusion): 80°C, 90ml
・Water (2nd infusion): 80°C, 90ml
・Ice: as needed

Brewing Method

1. First Infusion

Pour 90ml of 80°C water over the tea leaves in the teapot. Let it steep for 1 minute, then pour into a server filled with ice.

2. Second Infusion

Pour 90ml of 80°C water into the teapot, steep for 20 seconds, then add to the first infusion. Stir well, thoroughly chill, and pour into glasses to serve.
