We'll introduce a brewing method that brings out the characteristics of the tea leaves, along with a food pairing suggestion. The steps are the same as the basic brewing method, but you can enjoy it by adjusting the temperature and steeping time.
Flavor profile of "032 Tsuyuhikari Ei"
Want to drink cold tea right now? In such cases, we recommend the rapid cooling method where you immediately cool the brewed tea with ice cubes.
Put ice cubes in a glass server, pour in both the first and second infusions brewed separately, and swirl to cool. When poured into a glass, you'll have a beautiful light green drink. Since the rapid cooling method tends to dilute the flavor, the key to brewing deliciously is to steep for 10 seconds longer than usual.
Food pairing for "032 Tsuyuhikari Ei": "Sea Bream Simmered in Sansho"
For pairing, we recommend sea bream, a popular delicious fish that comes into season in early summer.
While it's often served grilled, we've prepared it as a simmered dish combining it with fresh sansho pepper, which also comes into season from June, to fully enjoy these seasonal ingredients.
Tsuyuhikari is a vibrant, floral, and robust tea. Even when served cold, it maintains its excellent taste and aroma, standing up well to the strong flavors of soy sauce and sansho pepper.
