Tangy Fruit × Rich Tea: Citrus Tart and "056 Yabukita Usuki" Recipe

The deep and rich-flavored "056 Yabukita Usuki" has the characteristic taste of sencha while pairing well with Western-style sweets. When served with a tart topped with plenty of seasonal citrus fruits, it's best brewed at a slightly lower temperature.

The umami is well extracted, harmoniously complementing the sweetness and acidity of the citrus, as well as the richness of the tart and cream, making it enjoyable until the last sip.

What You'll Need

・4g of "056 Yabukita Usuki" tea leaves
・First infusion: 80ml of 60°C water
・Second infusion: 120ml of 70°C water

Brewing Method

1. Prepare the First Infusion

Warm the cup with hot water (not included in the measurements). Add the tea leaves to the teapot and pour 80ml of 60°C water. Let it steep for 90 seconds. Discard the water from the cup and pour in the tea.

2. Prepare the Second Infusion

Pour 120ml of 70°C water into the teapot, let it steep for 20 seconds, then add it to the first infusion. Your tea is now ready!
