This time, we're introducing a drink recipe perfect for spring using loquats, which are in season from May to June, and "002 Koshun"!
"002 Koshun" and Loquat Spice Mocktail
"002 Koshun" is a variety from "Honzan" in Shizuoka Prefecture, known for its fresh and mineral-rich taste. It features refreshing flavors like grapefruit and cinnamon. When paired with the subtle sweetness and tartness of loquats in season in May, it feels like an early summer breeze.
<What You'll Need>
• "002 Koshun" 4g
• Loquat 1
• Sugar to taste
• Cardamom 1 pod
• Water 80ml
• Carbonated water 80ml
<Instructions>
【1】Cold brew Koshun
Cold brew 4g of tea leaves in 80ml of water in the refrigerator for 30 minutes.
【2】Cut the loquat
Peel the loquat (carefully remove the thin inner membrane as well) and cut it into quarters.
【3】Heat and cool
Put the cold-brewed Koshun from 【1】, loquat, sugar, and cardamom in a pot. When the sides of the pot start to bubble, remove from heat. Once cooled to room temperature, refrigerate.
【4】Pour into a glass
Put 3 ice cubes and 1 piece of loquat in a glass, pour in the mixture from 【3】 and carbonated water, and it's ready!
The remaining loquat pieces can be enjoyed as a compote on their own or served on top of vanilla ice cream. Let's savor this seasonal flavor while it lasts!
