Pairing "039 Sakimidori Izumo" with "Bamboo Shoots Tosa-ni"

The vegetable-like umami taste of this tea is due to the tea's umami component, "glutamic acid". Another umami component, "inosinic acid", is found in animal products. When these two combine, they create a synergistic effect, doubling the umami. Therefore, Tosa-ni, which uses bonito flakes, pairs exceptionally well.
