"Homemade Green Tea Ice Cream" with Powdered Green Tea: An Easy Recipe for Sencha Lovers

Homemade Green Tea Ice Cream Recipe

<Ingredients> For 4-5 servings

Powdered green tea sticks 14g (4 sticks)

Hot water 40cc

Heavy cream (35-40% fat) 200cc

Milk 30cc

Egg yolk (M-L size) 1

Granulated sugar 45g

<Instructions>

[1] Dissolve powdered green tea in hot water

Put the powdered green tea in a bowl, dissolve it thoroughly in hot water ensuring no lumps form, then let it cool.

[2] Heat the heavy cream and milk

Put the heavy cream and milk in a small pot. Heat it while stirring, until it's lukewarm, being careful not to let it boil.

[3] Mix egg yolk and granulated sugar thoroughly

Put the egg yolk and granulated sugar in a bowl. Mix thoroughly with a whisk until the sugar is completely dissolved. Continue mixing to incorporate air until the mixture becomes whitish, then move to the next step.

[4] Combine everything and strain into an airtight container

Add [2] and [1] to the bowl from [3], mix thoroughly, then strain the mixture into an airtight container and place in the freezer.

[5] Chill in the freezer, stirring 3-4 times

After chilling in the refrigerator for about an hour, stir the entire ice cream mixture with a spoon to incorporate air evenly. Repeat this process 3-4 times, stirring every 30-40 minutes.

Tip: Using a metal airtight container, such as stainless steel, is recommended as it freezes faster.
