Spring Delicacy: "044 Ujimidori" Recipe Paired with Blanched Wild Mountain Vegetables

The refreshingly delicious "044 Ujimidori" with its elegant umami flavor pairs exceptionally well with Japanese dashi broth.

For the first infusion, enjoy the tea on its own to savor its concentrated umami. For the second and third infusions, which develop a fragrant and crisp taste, pair it with a side dish of distinctive mountain vegetables. You'll be amazed not only by the changing flavors of the tea itself but also by the exquisite layering of flavors in this pairing.
