Hand-Rolled Sushi with First Harvest Nori and Deep-Steamed Green Tea Recipe

Hand-rolled sushi and tea are one of the most standard pairings in Japanese cuisine. This time, we've combined this basic pairing using nori (seaweed) and tea from their respective production areas. We're introducing a combination of first-harvest nori from "Numata Nori Shop" in Nihonbashi with tea from Senchado Tokyo! We've paired "Kashima Daisan Ichiju 1" nori, known for its substantial thickness and flavor that expands as you chew, with "050 Shige No. 2" tea, which has a deep yet refreshing taste. Please try this pairing of hand-rolled sushi, which allows you to enjoy both the crispness of the nori and the moistness when it absorbs the rice's moisture, with the rich "050 Shige No. 2" tea.

"050 Shige No. 2" Recipe to Pair with Hand-Rolled Sushi

Deep-steamed tea, with its relatively subdued aroma, is perfect to pair with rice. This recipe for the flavorful "050 Shige No. 2" involves brewing two infusions, providing enough tea to enjoy throughout your meal.

Ingredients

"050 Shige No. 2" tea leaves: 4g Hot water: 1st infusion - 120ml at 75°C 2nd infusion - 120ml at 75°C Hand-rolled sushi... your preferred ingredients (Nori: "Kashima Daisan Ichiju 1")

Brewing Method

[1] First Infusion

Put the tea leaves in the teapot, pour 120ml of 75°C water, steep for 40 seconds, then pour into a glass. (Mix the first and second infusions)

[2] Second Infusion

Immediately pour another 120ml of 75°C water into the teapot, steep for 10 seconds, then add to the glass. Take a bite of hand-rolled sushi, then sip the tea... As you savor the deliciousness of the nori, tea, and rice, you'll feel a sense of happiness slowly spreading through your body.
